Baked Cornflake Chicken Burger & Red Onion Pickle

Ingredients

S&W mayo

4 burger buns

1/2 iceberg lettuce, shredded

600g chicken things, deboned

2 tbsp galic powder

200 ml buttermilk
3 cups of cornflakes

1 tsp dried oregano

1 tsp dired thyme

1 tsp paprika

1tsp celery salt

1 red onion, sliced thinly

2 tbsp honey

1 cup white vinegar

2 eggs, whisked

pinch of salt

pinch of pepper

Steps

  1. In a medium bowl mix chicken thighs, garlic powder and buttermilk. Refrigerate for 2 - 4 hours.

  2. Blend cornflakes, oregano, thyme, paprika, celery salt, salt and pepper.

  3. Thinly slice red onion and mix with honey and white vinegar is jar. Refrigerate for 1-2 hours.

  4. Add 2 whisked eggs to buttermilk chicken then mix.

  5. Coat chicken thighs in cornflake mix.

  6. Bake chicken in oven at 200c for 20 mins.

  7. Spread S&W Mayo on burger bun followed by iceberg lettuce, chicken and pickled onion on top!
