Grilled Chicken Tacos

Ingredients

1 packet of Avofresh

1 packet of mini tortillas

400g chicken thighs

1/4 red cabbage, thinly sliced

1/3 green cabbage, thinly sliced

1 tomato, diced

1 corn, kernels cut off

1 jalapeño, thinly sliced

2 sprigs of coriander, diced

2 tbsp lemon juice

1 tbsp olive oil

Chipotle mayo

Salt

Pepper

Steps

  1. Season chicken things with olive oil, salt, pepper and lemon juice in small bowl.

  2. Prepare cabbage, tomato, jalapeño and coriander.

  3. On a high heat grill cook chicken and corn for 4 mins each side.

  4. Toast tortillas wraps on grill until heated through.

  5. Slice kernels off corn cob.

  6. Assemble tacos as you desire with Avofresh on top.
