Pan Fried Jackfruit Tacos & Coriander Mayo

Serves

2 (6 tacos)


Ingredients

Sauce

3 tbsp S&W mayo

2 cups coriander

1 cup sour cream

2 tbsp lime juice

Salt

Pepper

Taco filling

410g jackfruit., shredded

400g black beans, smashed

1 tsp paprika

1 tsp onion powder

1 tsp garlic powder

1 tsp chilli flakes

1 cumin seeds

2 tbsp olive oil

Salt

Pepper

Other

6 pack of small tortillas

2 tbsp vegetable oil

Steps

  1. Blend S&W mayo, coriander, sour cream, lime juice, salt and pepper in blender until smooth. Refrigerate 1 hour.

  2. In a medium bowl combine jackfruit, black beans, paprika, onion powder, garlic powder, garlic powder, chili flakes, cumin seeds, olive oil, salt and pepper.

  3. Spread taco filling onto tortilla and fry face down in hot vegetable oil.

  4. Press down on taco to flatten and flip off  over, 3 mins each side.

  5. Serve tacos hot with coriander mayo and olive oil.
