Red Mayo Eggplant Burger

Ingredients
3 tbsp S&W Mayo
1 small eggplant, halved
1 burger bun
1 tsp cumin seeds
1 tsp fennel seeds
1 cup crushed tomato
50g baby spinach
20ml white balsamic dressing
Parmesan cheese, grated
Olive oil
Salt
Pepper
Steps
Cut eggplant in half and score top.
Place on baking tray, drizzle olive oil and salt, bake at 200c for 25 mins.
Toast cumin and fennel seeds in pan on medium heat.
Toast burger bun in pan on medium heat with olive oil.
Mix crushed tomato, toasted herbs, S&W Mayo, salt and pepper in medium bowl.
Coat baby spinach in white balsamic and olive oil.
Build burger with baby spinach, eggplant, red mayo top with grated parmesan cheese.
