Simple Rice Noodle Salad

Ingredients

Wokka rice noodles

1/3 cup fish sauce

1/2 cup rice vinegar

1/3 cup white sugar

2 garlic cloves, chopped

1 lime, juiced

3 carrots, julienne

1/2 cucumber, julienne

3 spring onion sprigs, julienne

3 sprigs of coriander, leaves picked

Sesame oil

Salt

Pepper

Steps

  1. Pour boiling water over Wokka rice noodles in medium bowl. Cover for 5 mins, drain then place into cold ice water.

  2. In a small bowl mix fish sauce, rice vinegar, white sugar, garlic and lime juice. Refrigerate 30 mins.

  3. Prepare carrot, cucumber, spring onion, coriander in medium bowl.

  4. Mix Wokka rice noodles with salad and top with dressing, sesame oil, salt and pepper to serve.
