Spicy Kimchi Rice Noodles

Ingredients
1 packet Wokka rice noodles
1/2 cup kimchi juice
1 cup kimchi
1 tbsp gochujang
1tbsp sesame oil
1 tbsp rice wine vinegar
1 tbsp tamari
1 tbsp honey
4 garlic cloves, sliced
3 choy sum, shredded
1/2 cucumber, matchsticks
2 eggs, boiled
Sesame seeds
Salt
Pepper
Steps
Bring kettle to boil, place rice noodles in medium bowl with pinch of salt and cover with hot water for 5 mins. Drain noodles.
Mix kimchi juice, kimchi, gochujang, sesame oil , rice wine vinegar, tamari, honey and garlic in medium bowl.
Combine rice noodles and sauce together, refrigerate 1 hour.
Bring small pot of water to boiling point, place eggs in pot and cook for 7 mins.
Allow eggs to cool then peel shell and slice in half. Cut choy sum and cucumber.
Serve all elements together and finish off with salt, pepper, sesame oil and sesame seeds.
