Red Coconut Peanut Butter Noodles & Hemp Seeds

Ingredients

1 packet of Wokka rice noodles

2 garlic cloves, chopped

2 tbsp red curry paste

1 tbsp chilli flakes

1 cup coconut cream

1 veg stock

3 tbsp peanut butter

1/2 lime, juiced

1 tbsp coconut sugar

2 tsp coconut aminos

2 tsp hemp seeds

1 spring onion sprig, chopped

Vegetable oil

Steps

  1. On medium heat add vegetable oil, garlic, red curry paste and chilli flakes to pan.

  2. coconut cream and veg stock, mix.

  3. Add peanut butter, lime juice, 1 tbsp coconut sugar and coconut aminos.

  4. Soften Wokka rice noodles in boiling water for 2 mins then drain, add to pan.

  5. Mix together noodles and sauce. Serve with hemp seeds and spring onion.
