Mini Mexican Meatball Subs

Serves

2 (yield 6)


Ingredients

1 packet of Avofresh

1 packet of mini hotdog rolls

300g mexican salsa sauce

300g beef mince

2 cloves garlic, minced

1 tbsp dried coriander

1 tbsp paprika

1 egg

1 red onion, diced

1 capsicum, diced

1 tbsp lime juce

3 sprigs of coriander, chopped

Olive oil

Salt

Pepper

Steps

  1. Combine beef mince, garlic, dried coriander, paprika and egg in medium bowl, roll into 12 meatballs.

  2. In a pan on medium heat with oil cook meatballs for 6 mins.

  3. Chop red onion, capsicum and coriander, mix lime juice in bowl.

  4. Spread Avofresh on hotdog rolls then add meatballs, veg mix, Mexican salsa sauce, coriander and finished with salt, pepper and dash of olive oil.
