Malt Mayo Fish Burger

Ingredients

Malt mayo sauce

3 tbsp S&W Mayo

2 tbsp malt vinegar

1 tsp pepper

Cucumber pickle

1 punnet of baby cucumbers, sliced thinly

1 tsp dill

1 tsp honey

1/2 cup malt vinegar

1/2 cup water

Batter

1 cup flour

1/2 cup rice flour

3/4 cup cold pale ale

Burger

2 tbsp flour

4 cod fish filets

4 burger buns

1/2 cup vegetable oil

1/2 cabbage, thinly sliced

1 lemon, wedged

Salt

Steps

  1. Mix S&W mayo, malt vinegar and pepper in small bowl, refrigerate 1 hour.

  2. Combine baby cucumber, dill, honey, malt vinegar, water in another small bowl, refrigerate 30 mins.

  3. Mix flour, rice flour and pale ale together in medium bowl.

  4. Coat fish fillet lightly with flour.

  5. Toast burger buns on medium heat pan.

  6. Heat up vegetable oil in fry pan.

  7. Coat fish fillet in batter and fry each side for 4 mins.

  8. Add cabbage, fish, malt mayo, cucumber pickle to burger bun, finished with salt and lemon wedge.
